Red Velvet Cake

Ingredients:

For the cake:

2 ½ cups all-purpose flour

2 tablespoons unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

2 cups granulated sugar

2 large eggs

1 cup buttermilk

2 teaspoons vanilla extract

1 tablespoon red food coloring

1 teaspoon white vinegar


For the cream cheese frosting:

8 ounces cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract


Instructions:


Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.


In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.


In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.


Mix in the buttermilk, vanilla extract, red food coloring, and white vinegar until well combined.


Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.


Divide the batter equally between the prepared cake pans. Smooth the tops with a spatula.


Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.


Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.


While the cakes are cooling, prepare the cream cheese frosting. In a large bowl, beat the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla extract, continuing to beat until well combined and fluffy.


Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.


Optional: Decorate the cake with red velvet cake crumbs, sprinkles, or additional frosting, as desired.
